Scallops: Spicy Carrot Puree

This course was simple, bright and easy to prepare for guests. You can make the puree in advance and just sear the scallops right before serving. Make sure to season the scallops well and sear them on a high heat setting for about 2 minutes on each side. That pop of orange is pretty too.
